Flying high with Katrin
Square Monkey Café is a new eating establishment based at Leeds Bradford International Airport which services the airports 2200 employees and the vast number of passengers (2.6million in 2005) that pass through the airport.
Making good choices
From a supply chain point of view, Sarah and Mark strive both to reduce their commercial footprint and to promote fresh local produce. All their soups and cakes
are made on the premises, from fresh ingredients, mainly sourced from Yorkshire - so distance travelled is very low. On the menu is a ‘Monkey Club Sandwich’ although
thankfully this isn’t made from actual primates but local chicken and bacon!
